Guest Post: Lemon Fizz Punch

When all the holiday cheer leads to a lot of “Cheers!” it can be tough for a Fit Girl to keep from refusing glass after bottle after flute after (gasp) shot. Since the FG drinks of choice are champagne and vodka– and those happen to be my personal favorites too – I decided to combine the two into a festive punch!
The secret ingredient here is the lemon. Lemon covers the taste of alcohol quite nicely, and adds flavor without any calories. Citrus fruits are a sophisticated holiday flavor, and, well, nothing says “Celebrate” like champagne!
Ingredients
(Serves 6 to 8, depending on how your crew drinks)
One 750 ML bottle champagne chilled
One cup vodka
½ cup Splenda
7 lemons, room temperature
Slice four lemons into rounds and place in the freezer.
With a vegetable peeler or zester, zest the remaining lemons so you have long strips of zest. Then juice the lemons, and set the juice aside.
Heat the Splenda and a half-cup of water on the stove in a saucepan, stirring until the Splenda has dissolved. Bring to a boil, then remove from heat. Add the lemon strips. Let the syrup cool completely, for about two hours, removing the lemon zest when cool.
Combine lemon juice, champagne, vodka, and syrup in a punch bowl and stir. Garnish with the frozen lemon rounds. (Which will keep your punch cold without ice!)
And just because the drink is guilt-free, don’t get too carried away – even though the lemon flavor will make it seem deliciously non-alcoholic, your hangover tomorrow will prove otherwise!
